panaté, a Benefit Corporation, builds a network of bakery laboratories inside Italian prisons, reshaping the way we look at the prison economy. We promote training, work and social inclusion, creating bridges between institutions, businesses and civil society. Our ambition is to generate value and dignity—inside and outside prison walls—proving that good things can come out of prison.

We were born in 2019 inside the Cuneo Correctional Facility, and from there panaté began to grow in the ovens of Italian prisons, transforming places of waiting into places of possibility. In our bakehouses, high-quality products for the horeca and foodservice sectors come to life, blending craftsmanship, responsibility and social vision. For us, excellence starts inside: in work done with care, in trust rebuilt day after day, in the desire to put our hands back into the dough — and into life.

In Italy, 70% of people leaving prison reoffend. But when someone works and receives training during detention, the recidivism rate drops below 10% (source CNEL). This paradox is where panaté was born: a sustainable, scalable and replicable model of prison economy, that transforms a sentence into a real path of growth and change.
