we believe in:
- an economy that doesn’t exclude, but welcomes.
- work that doesn’t exploit, but transforms.
- the value of every person.
our roots
panaté was born in 2019 inside the Cuneo Correctional Facility as an experimental social-enterprise project. From that first bakery came a larger vision: building a national network of prison-based bakehouses where training, work, and quality come together to create real impact. Today, panaté operates inside the prisons of Cuneo, Fossano, and Turin, with an external laboratory in Magliano Alpi employing both inmates and former inmates. By 2026, we will open four new laboratories, creating new jobs and new pathways to renewal.
our mission
To produce excellent baked goods inside correctional facilities while offering human and professional growth, real employment and social inclusion to people serving a sentence. Every day, we demonstrate that true value is created where product quality meets human dignity.
our vision
To transform prisons into places of work, learning, and renewal. To build an ecosystem of prison-based economy grounded in enterprise, training, and shared responsibility. To prove that a civil, human-centered business model can change society and restore value to people and communities. Our dream: that one day, saying “prison” will mean saying “work.”
how our model works
panaté is a hybrid model that brings together correctional administrations, businesses, training institutions, the third sector and public bodies, inside and outside prison. It is a collaborative, co-responsible ecosystem that combines economic sustainability, product quality and social impact, generating trust and cultural change
- a prison-economy model built on a shared ecosystem:
- panaté Srl – the entrepreneurial engine of the project
Develops products and markets, ensuring the project’s scalability and economic sustainability; expands the model across Italy by identifying and connecting all the actors essential to its implementation. - correctional administrations – our strategic partner
Ensure the feasibility of the project by creating rehabilitative pathways aligned with work placements, and support the development of the network of actors involved. - social cooperatives – the operational heart
Manage daily production, train and employ incarcerated people under regular work contracts, offering pathways of professional development and responsibility. They also carry out advocacy work to raise awareness within the local communities in which they operate. - Articolo 27 Association – the system’s voice for awareness, promoted by panaté
Organises Art. 27 Expo (the national fair on prison economy created by panaté in 2023) and promotes a new vision of prison economy — more human, participatory and sustainable — to engage territories, encourage businesses and civil society, and foster shared responsibility in supporting work and social reintegration after release.
panaté builds an integrated and replicable value chain, where enterprise and social cooperation strengthen one another. The balance between economic and social dimensions allows the model to grow while keeping people, and the quality of work, at its core.
who benefits
from the panaté model:
- Incarcerated people: gain a concrete opportunity for renewal through real work.
- Families: ebuild and strengthen trust and connection.
- Correctional administrations: see improved working environments and more effective rehabilitation pathways.
- Civil society: benefits from greater safety, cohesion, and inclusion.
- The wider community: experiences reduced public spending on the prison system and security.
